My Grandma Marie Begus Koetting was a great baker. She often made desert with dinners, as did my mom. I don’t know if she ate too much desert, she was so little. Mom tells me that Grandma would keep a box of chocolate up high, and every evening she would bring down the box and have one piece. I have inherited her love of chocolate and do the same thing every night with a small piece of the darkest chocolate possible. |
When Grandma came to visit she would always bring English toffee and white chocolate covered pretzels. We seldom had candies at home, mom made desert and cookies, but store bought candies were a treat. I still love English toffee and think of my Grandma whenever I eat it. | |
I have a birthday this month, and I had the opportunity to make my Grandma’s Chocolate Loaf Cake. I don’t want to eat the whole thing, so I made it for the pot-luck at work. This is my favorite cake in the world and very easy to make. |
Chocolate Loaf Cake
Ingredients
1 Cup boiling water
2 Ounces baking chocolate
1/2 Cup shortening
1 1/2 teaspoons baking soda
2 Cups flour
1/2 teaspoon salt
2 Cups sugar
2 Beaten eggs
1/2 cup milk with 1 1/2 teaspoon vinegar
1 teaspoon vanilla
Directions: Boil water, remove from heat, stir in chocolate and shortening until melted. Add baking soda stir in. Add flour, stir in with a whisk. Add salt, sugar, beaten eggs, milk and vanilla. Pour into a buttered and floured large bread pan. Bake for 1 hour and 20 minutes at 350 degrees. Remove from pan while still warm. Let cool before frosting.
Chocolate Frosting
Ingredients
1/2 cup butter
1/2 cup cocoa
2 cups powdered sugar
milk
Directions: soften butter, beat cocoa and sugar into butter, add milk until spreadable consistency.
