Slovenian Honey

I confess that honey is a weakness of mine. I try to limit sugar, but I would eat honey out of the jar with a spoon. My father-in-law used to keep honey in the comb on the table. He and I would eat it on bread, wax and all, savoring every bite. I didn’t realize it when I started writing ‘Longing for Home’, but honey is a big deal in Slovenia. Slovenia is the only European country to have protected the Carniolian bee – its native bee.
Slovenian honey is actually trademarked. It is a product of a particular geographical region. Because Slovenia has such a variety of terrain, there are multiple varieties, including flower honey, forest honey, acacia honey, linden honey, spruce honey, sweet chestnut and even cherry. I’m not generally a sweet person, but with all that honey I have a chance of becoming sweeter. Hmm, Slovenian honey on buckwheat bread? I’ll try making it and let you know how it is.
I guess the town of Bled, famous for honey and for cream cake is also on my trip planner. They have a festival of honey in the middle of September. Sounds like a place for me.
